Today we are pickling beets and as I wash, boil, peel and cut them I think about their origin....the seed. I asked my staff to close their eyes, take a bite of the beet and slowly (very slowly) chew it, imagine its origin from seed to table The journey of that seed is intensely exhilarating....at least to me. The idea that a huge community exists within every square inch of soil isso remarkable. I thought about that tiny seed, how it had to push through the dirt, fight for the sunlight to nourish itself so we could be nourished. Pretty cool. The Winyan Toka Win Garden was just this place where I wanted our kids to feel the soil, get dirty, run, play and learn. But then the garden spoke to us, to me and said, but I can do this for you too. I want them to understand what Unci Maka has to offer. I want them to learn how it feels as they run their fingers through the soil I want them to grow and learn to love the land. We are Lakota They deserve the best, you deserve the best, I deserve the best Fresh, naturally grown food is the best. So do me a favor....close your eyes, eat a cherry, a berry, a piece of fruit or a beet. Take the journey in your mind, Appreciate it, nourish yourself And give thanks to the Beet, a truly thought provoking root vegetable.
