Todays Recipe: Chicken Maryland and boiled rice Ingredients: 500g Chicken thighs & drumsticks (1.25kg £2.99 Aldi) = £1.19 4 Tbsp plain flour (1.5kg 45p Aldi) = 2p Salt and pepper to season 1 tsp paprika – store 1 egg (89p 6 free range Aldi) = 15p 100g fresh breadcrumbs (55p 800g Aldi) = 6p 25g butter (95p 250g Aldi) = 10p 3 tbsp vegetable oil – store For the sauce: 25g butter (as above) = 10p ½ red pepper seeded and diced (89p for 3 Aldi) = 15p 25g plain flour (as above ) = 1p 175ml single cream (300ml 65p Aldi) = 38p 2 bags of boil in the bag rice (59p for 4 Aldi) = 30p Grand Total = £2.46 Method: Mix together salt/pepper/flour and paprika. Coat the chicken with the seasoned flour. Dip the chicken in the beaten egg and then breadcrumbs. Heat a large frying pan with the 1st lot of butter & oil, add the chicken and fry until lightly browned and tender (for about 20mins). Also boil the rice bags at the same time. Meanwhile make the sauce – heat the 2nd lot of butter in a pan and add the pepper cook for 3-4 mins and then stir in the flour. Gradually stir in the cream and seasoning and cook until thickened, stir this continuously but DON’T boil it. Serve the chicken on the rice and serve the sauce on the side.
