Todays canning experiments.... Chocolate pudding -- I mixed it up from scratch as though I was going to cook it in a pan, with sugar, cornstarch, etc., and I used dehydrated eggs instead of fresh eggs. This looks like it might have come out really good. The jar that Im holding sideways shows that the pudding is holding its shape and has pulled away from the bottom of the jar when I tipped it sideways. Obviously its not runny. Tomorrow when its thoroughly cooled, well open one and try it. Yeast bread -- These appear to have come out nice. Again, Ill wait until tomorrow, when theyve had time to thoroughly cool, and then open and slice one. I mixed up bread dough and let it raise once in a bowl in the oven over the pilot light. Then I dropped a ball of dough in the bottom of each jar (which was sprayed with cooking oil), about a little less than half the jar of dough, since I didnt know how much it would raise. I let it sit for about 15 minutes, then set it in the canner, which already had the jars of pudding in it, ready to go. Biscuits -- This looks least likely to be really good. But I wont know until I open them tomorrow. Again, I didnt know how much they would raise, so I just put a bit of biscuit dough in the bottom of the jar. It looks like I could have put a lot more dough in it. You never know with things that have baking powder in it. When I make canned fruit cobbler and dont use baking powder, they come out wonderful, but the one time I put baking powder in the cobbler batter the stuff crawled all over the canner. So I was uncertain about the biscuits. I ran the whole bunch through the canner for 70 minute at 15 lbs. pressure. Were at high elevation, otherwise I could have used 10 lbs. pressure. Tomorrow Ill follow up here in the comments on this post, after we open one jar of each.
