Todays healthy recipe! Chicken Pesto Kale Salad:) 1grilled chicken breast (cut into small chunks) Bag of fresh kale ( cook in oven 20min at 400deg until crisp with olive oil) 1 cup cooked quinoa 1/2 avocado (cut into small chunks) 1 tsp pesto ( if you want to make your own- purée 1/4cup pine nuts,1/2garlic clove,11/2cup basil, dash of Parmesan, 1tsb lemon juice and 1/4cup olive oil Toss all ingredients together and enjoy a healthy meal!!!
