Todays lunch - Grilled Eggplant with Easy Tomato Sauce Start grill. Cut small eggplants in half (in US, Japanese eggplants) and cut cross-hatches deep into flesh (dont cut through skin). Rub salt into cross-hatches (not too much) and then rub entire eggplant half with olive oil. Make Easy Tomato Sauce: Dice 1 medium onion and saute in olive oil until start to turn golden, mince 4 large garlic cloves and stir into onion, add 3-4 cups pureed fresh (or crushed canned) tomatoes. Cook until sauce thickens to your liking. Stir in 3-4 Tbsp. minced fresh basil. Cover and turn heat to low while you grill eggplant. Grill eggplant over medium high heat. A little char on the cut side adds good flavor, but be sure not to overcook the skin side or itll be too tough to eat. Top grilled eggplant with tomato sauce and grated cheese (I used graviera cheese from the Greek island of Naxos but kasseri, parmigiano reggiano, or asiago would also be good). Eat and be happy!!
