Todays lunch: Baby Green Peas with sautéed garlic, onion, potatoes and smoked ham 1 bag of frozen baby green peas (I used two bags to have for a couple of days) 2 small red onions (sliced thin and cut in four sections)... The smaller and thinner the better. 1 head of fresh garlic (peeled and sliced in really thin slices) 1/2 cup sliced smoked ham (cut up in tiny slices) 2 small potatoes (peeled and cubed in small pieces) 1/2 teaspoon of paprika 1/2 teaspoon of oregano 1/2 teaspoon himalaya salt (truffle flavor) or regular himalaya or sea salt 1 pinch of white pepper 1/4 cup of virgin olive oil (for sautéing) Fry cubed potatoes in olive oil for about 5/8 minutes until they are almost cooked and reserve... In a big skillet sauté the onions and garlic with the 1/4 cup of pure virgin olive oil until almost toasted, add ham and paprika and cook for another 3 minutes, add fried potatoes, oregano and stir all ingredients good together... Let cook for another 2/3 minutes until all is blended good...next step is to add the frozen baby peas and mix with all the sautéed veggies, once it starts to boil, lower heat and simmer on medium heat, add salt, mix well, let simmer with a covered top for another 10/15 minutes until baby peas are cooked, taste test the baby peas to check if they are done...if done turn off stove and let set for a good 10 minutes before to serve...they are also delicious for the next day...hope you all enjoy this recipe ...
