Tofu Scramble Ingredients 1/2 onion, diced 1/2 red bell pepper, diced 8 oz. firm tofu, drained 1 heaping Tbsp. nutritional yeast 2 cloves of garlic, chopped 1 whole fresh oregano sprig 1/2 cup chopped tomatoes 1/4 cup fresh parsley, chopped salt and pepper to taste Directions In a frying pan drizzle a Tbsp or two of olive oil and sauté the onions and bell pepper on medium heat for about 5-6 minutes. Add in the tofu, nutritional yeast, garlic and oregano sprig. Sauté one minute and then add in the tomatoes and salt and pepper. Sauté another couple minutes. Mix in the parsley and turn the heat off. The parsley will wilt when you toss it with the hot mixture. Serve warm. Serve warm.
