Tofu and mashed potato gratin that tastes swimmingly :D. Once upon a time, I was not vegan. Scary, I know. Back then one of my favourite comfort food was fish gratin and I had it constantly. Looking back, it was objectively pretty terrible. It usually was some cheap, mushy and microwaveable mess.. But back then I liked it nonetheless (low standards). So to capture that nostalgia, I veganized the dish using tofu! And let me tell you, it is a billion times better! I used seaweed caviar and lots of dill to get that sea like taste. Mmm!
