Tomato olive pesto.. I LOVE this stuff and have it on everything - mixed with Zoodles, on fried or poached eggs, on seed crackers (with some cream cheese).. I adapted it from Pete Evans raw zucchini lasagne recipe. So here it is. 1/2 head of broccoli 1/2 cup pitted green Sicilian olives (yes they need to be the Sicilian olives - the flavour is perfect) 200g sundried tomatoes. Coles now sells oil free sundried tomatoes - yay! 2 vine ripened tomatoes, chopped 200g button mushrooms 1 sprig Rosemary 6 TBS of macadamia nut oil (or olive oil) 1 TBS coconut vinegar 1 head roasted garlic (or 2 raw garlic cloves). I prefer it with the roasted garlic. Add all the ingredients to a food processor and blitz. Store in a container in the fridge. It can be stored in batches in the freezer and defrosted as needed. As for the whole of Petes raw zucchini lasagne - I tried it once with little success. I might try it again one day with a few more of my own tweaks. Enjoy.
