Toma’s Birthday Cake Ingredients: 2 lb Sour Cream (25% milk fat – greasy, I know, but do not experiment ☺ 7 oz powdered sugar 2 little packs of granulated gelatin (20 grams, 0.7 oz) 1 lb fruit of your own choosing; it can be frozen, but defrost it ahead and try to dry it as much as possible (so far I tried, and it all worked well: strawberries, raspberries, mixed berries, sour cherries, pineapple, and I know that some people used bananas as well) 3 x 3.5 oz lady fingers (savoiardi is the same thing); you need somewhere between 36 and 40 biscuits 8 oz (or more) heavy whipping cream Mix cream, sugar and gelatin together. Lay half of the biscuits (depending on the plate, 18 – 2x9, or 20 biscuits in two rows), cover them with almost half of the frosting and half of the fruits; over the fruits put a bit more of frosting to “glue” next layer of biscuits. Repeat all for the next layer. KEEP IN REFRIGERATOR FOR 24 HOURS. Before serving, add whipped cream and decorate with some more fresh fruit. Enjoy!
