Tomorrow is Friday; the end of the work week, you have a lot of errands to run, you are trying to get ready for a weekend at the shore, weather is heating up now and you want something light, but good and food that everyone will like. How about a refreshing colorful salad with assorted vegetables that has something for everyone? A salad, like most foods, has eye appeal, therefore you can add or leave out what does not appeal to you. Use your own imagination, create a bowl or platter of healthy, light and very in-viting assortment of foods. This is what is good about a salad, you can make it your own. SUMMER VEGETABLE SALAD 1 can of artichoke hearts, quartered 1 qt. of grape tomatoes lettuce leaves 1 red bell thin sliced pepper 1 diced avocado 1/4 lb. cut up green beans 2 fresh cut up beets 1 ear corn, cut off of the cob, or 1/2 cup canned corn 1/2 cup celery 1/2 cup sharp cheese, cubed 1/4 cup diced red onion 1 can drained black or cannellini beans or chick peas salt & pepper to taste sprigs of fresh parsley and basil Add all ingredients into a bowl except the lettuce. Make a marinade of juice of 1 lemon, 1 tsp. honey mustard, and 1/4 cup of olive oil, whisk all together and pour over vegetables. Let it set for 15 minutes so all flavors meld together. Serve on a layer of lettuce and serve with crispy rolls and cold beverage.
