Tonight I made up a recipe for Italian Sausage Soup using mostly ingredients from our farm and what I bought at the Chewelah Valley Fresh Market this week. It was really good so here is the recipe: Italian sausage soup 2 cups of soaked hidasta beans 1.5 quarts of Chicken broth 2 lbs Italian sausage (cooked) 4 Large Heirloom Tomatoes 1 Large White Sweet Onion (chopped fine and sauteed in sausage grease) 4 cloves culinary garlic (chopped and sauteed in sausage grease with onion) 1 fennel bulb (chopped and sauteed in butter) Fresh Basil Fresh Oregano 1.5 Tablespoons salt 1 teaspoon pepper 2 Medium Zucchini (cut in large chunks) ½ bag spinach ½ bag of green beans or wax beans Cook beans until tender, drain out remaining broth (if you have pigs or chickens give this broth to them). To large soup pot add: Cooked Beans, Chicken Broth, Cooked Sausage, Chopped or Food Processed Heirloom Tomatoes, Onion, Garlic, Fennel Bulb, Salt and Pepper. Simmer for several hours. One hour before eating add: Fresh Basil, Oregano, Zucchini and Wax or Green beans. One half hour before eating add in broken apart fresh spinach pieces. Serve with either homemade sourdough bread or bread from Heathers Fairy Tale Bakery...:-)
