Tonights Menu from the Kitchen of Grey Eagle......... Several of yall like to hear and comment on the things I fix. First, back when I was married to my first wife in the early 1980s, I was working a lot of long over time hours, often 6 and 7 days a week, 12 to 14 hours a day. I will be nice cause a lot of my Ex-wifes family are still my friends and family, but my first Ex either could not or would not cook very much. Back then there was only like 2 or 3 different Hamburger Helpers on the market. She developed the habit of fixing a H-Burger helper every single night. It did not take long till I had my fill of them. In fact from 1985 until about 4 years ago I would not eat them period. Getting disabled in 2010 and on a fixed income made me rethink a few things. I now will keep a few of them on hand for the end of the month when my money is all gone, food is getting short and its still a few days till my next check. I still only have a couple of them I like. Tonight I took a pound of ground beef and browned it and then drained it and set it aside. I had 3 stalks of celery left that was getting pretty limp. I chopped them up real small. I chopped up my last onion and last 3 cloves of garlic. I took my next to the last can of mushrooms and chopped them up too. I Sautéed all that in half a stick of real butter, with salt, pepper, and Cajun seasoning along with about 1/4 cup of Lea & Perrins Worcestershire Sauce. After that all cooked down real good, I re-added the meat, a can of off brand rotel maters with green chillies, more Lea & P. and seasonings, about 1/2 to 3/4 cup Jalapeno peppers and a couple cups water, the noodles and seasoning pack from the H-Buger helper. I brought that to a boil then lowered the heat and let it simmer about 45 minutes. I got plenty left over for tomorrow night and let me say, this is the right way to make Hamburger Helper.....Very good!!!!
