Tonights Winter Grill (weather closer to normal with snow this morning and temps in the low 20s and 10 degree wind chill) Reverse Seared Petite Sirloin Fillets. Started on the upper grate of the egg and temp at ~300. When they all hit 125-135, I increased the temp and seared the families on the upper grate with a section of GrillGrate sitting below on the lower fire ring just above the coals. Took theirs to 145 degrees so the family all remain happy. Pulled theirs off. Removed the top grate and put my steak at 125 degrees on the #GrillGrate and seared on both sides for 1.5 minutes taking it to 135 internal. Served with toasted bread from last nights venture, creamed spinach, and French Onion Soup Potatoes. All were happy once again :)
