Tonights dessert was Pina Colada Layer Cake! 1 brick cream cheese 1 tub (8 oz) Cool Whip 1 can (14 oz) crushed pineapple, drained well 3 tbsp coconut 4 tbsp Sunset Gourmet Pina Colada Mix 3/4 cup sour cream 20 rectangles graham crackers cut fresh strawberries and/or coconut for garnish Blend softened cream cheese, Cool Whip, drained crushed pineapple, coconut and Pina Colada Mix until blended. Set aside Place 4 rectangles of graham crackers on the bottom of a serving platter. Spread a layer of the cream cheese mixture over the graham crackers. Add another layer of graham crackers. Repeat with another layer of cream cheese mixture. Continue to repeat ending with a layer of the Pina Colada mixture on the top. Garnish with coconut and cut fresh strawberries. Refrigerate overnight or at least 8 hours. Slice and Serve!
