Tonights dinner is easy peasy with this super fast idea: 1/2 Sweet Potato (microwave until soft) 1/4 Avocado 3 other veggies (ie broccoli, spinach, carrot, corn etc) Light Sour Cream or even better...cottage cheese Top cooked sweet potato with 1/4 avocado, 1 small can tuna or pre-cooked chicken breast, cooked vegetables and a dollop of sour cream or cottage cheese (or try mixing the two together for extra protein) and sprinkle of sweet paprika or chili flakes (if you like it spicy). Enjoy!
