Tonights dinner was an experiment ... that came out OMG wonderfully tender and flavorful in a deep, rich, soul and body-satisfying way. Corned beef ... that I corned myself (a 5 day brining process), then cooked slowly in ye olde crock pot. It isnt the pink color we are used to in commercial corned beef because I didnt use pink salt, which has sodium nitrate in it (it gives me migraines). These pictures are the left-overs. And there are 3 more just like this in the freezer!! Buying half a grass-fed, no-hormones, no-antibiotics cow was SUCH a good investment in ourselves and in amazing meat!!!
