Tonights recipe brings me to a happy place. Im originally from New Orleans and absolutely LOOOOVE Cajun and Creole dishes! To be able to make a clean dish with all the flavors of my childhood is a JOY! I have to give credit to my favorite food website Skinnytaste for the original recipe. I love EVERY recipe I make from here. I sometimes tweak them to fit dietary restrictions (no cheese/butter/etc.) or just because. I have to say... Youll be hard pressed to find a better site for healthy recipes. So, without further adieu... I present: Clean Shrimp and Beef Dirty Rice (Note* this makes a LOT do feel free to cut recipe down. I like leftovers for lunch and sharing with my clients!) 2 Lbs Peeled and deveined shrimp 1 Lb Organic extra lean ground beef 4 Cups water 1 Box Minute Maid instant brown rice 4 Chicken Bouillon cubes 3 Bay leaves 1 and 1/2 Sweet onions chopped 1 Green pepper, chopped 1/2 Red bell pepper, chopped 3 Stalks of celery chopped 4 tsp. Minced garlic Olive oil Creole Seasoning Garlic powder Smoked paprika Ground dried thyme In a pot, bring water, chicken bouillon, bay leaves, a dash (about 1/4 tsp) of garlic powder, creole seasoning, smoked paprika, and thyme to a boil. Add entire box of brown rice. Cover, reduce to low for 7 minutes. Turn off heat, let sit covered 15 minutes or until liquid is absorbed. Remove bay leaves, sit aside. Drizzle about 2 tsp olive oil in extra large skillet. Sauté onions, celery, garlic, and peppers until soft. Add ground beef, 1 tsp smoked paprika, 1 tsp. thyme and 1/2- 1 tsp creole seasoning and salt to taste. Cook until browned. Add shrimp, stir and cover about 5 minutes until shrimp are no longer pink. Add cooked rice and stir. Sprinkle with parsley. This will make you want to say AIEEEEE! Laissez les Bon temps roulez!
