Tonyas Chicken and Cheese Corn Chowder: 2 Large Chicken Breast Cubed in bite size pieces 4 lbs. white potatoes cubed small 1 large onion cubed small 1 tsp minced garlic 1 cup real bacon pieces 2 chicken bouillon cubes 1 stick butter 2 tbs lemon garlic seasoning (I used Velata which is the best I have ever found) 1 lb frozen corn 1 cup instant mashed potatoes 1 lb block muenster cheese shredded (or cheese of your choice) 3 cups milk 2 cups water In large skillet melt butter with minced garlic and bouillon. Add chicken, sprinkle with lemon garlic seasoning and cook until done. Add onions, corn, bacon pieces, and diced potatoes, cover, and cook about 15-20 minutes stirring often until potatoes start to soften. In a dutch oven add cheese, milk, and water and heat until cheese melts and mixture is almost ready to boil. Add skillet mixture to crockpot then pour liquid mixture over top. Simmer until potatoes are tender. Add cup of instant potatoes to thicken just before serving. Enjoy. Its YUMMY!
