Top of the mornin to ya - happy St. Paddys Day everyone! Make this Sweet Irish Soda Bread...its the perfect accompaniment to a pint of Guinness :) Sweet Irish Soda Bread Recipe by Zola Nene 4 cups flour ¼ cup brown sugar 1 tsp salt 1 tsp bicarbonate of soda 1 tsp baking powder 60g cold butter, cubed ½ cup raisins ½ cup currants 1 large egg 1¾ cups buttermilk 1. Preheat oven to 180C. Whisk together the flour, sugar, salt, and bicarb and baking powder into a large mixing bowl. 2. Rub in butter until mixture resembles breadcrumbs. 3. Add raisins and currants. 4. Make a well in the center of the mixture then add egg and buttermilk. 5. Mix together with a spoon until just combined. 6. Form into a ball then place onto a greased tray. 7. Cut a deep cross in the bread then bake for 20 – 30 minutes or until the bread is cooked through. 8. Serve with lashings of softened butter.
