Towards the end of my stay in Calcutta, based on a TV review, I went to Mitra Cafe. The place is quite old and is know for its chops and Kabiraji (the one in the picture). Theres a piece of mutton inside that shell. The shells made out of egg batter and the whole thing is deep fried. Theres a technique involved to deep fry it too. Thats how you get a web-like texture. Unfortunately, I did not like their version of the dish at all but the idea fascinated me. Id love to make it. Does anybody have a recipe? Kabirajis can be made using fish or mutton.
