Tracy Drabenstadt asked for a recipe for Creamy Corn Cups called Esquites. Here it is. 4 ears of sweet corn, husked and silks removed., 4 T mayo or mexican sour cream, 4 T soft unsalted butter, 6 T crumbled queso fresco or mild feta cheese, ground chili powder, for sprinkling, salt for sprinkling and served with lime wedges. In a large saucepan of salted water, bring to boil and add the corn and cook till tender, about 5-7 min. Transfer to platter and cool slightly. Remove kernels from ears with knife and divide corn into individual cups. Put 1 T may and 1 T butter on top and sprinkle with cheese, chili powder and salt. Serve with lime wedge. I hope this is the recipe you asked for, othewise it could be Elote which is a mexican grilled corn. Sue.
