Tried to post this earlier.... I have no idea why it didnt let me post this!! But anyway here it is!! Healthy Oreo Cookies 1 1/2 Cups Almond flour 1 tsp Coconut flour 1 tsp baking powder 1 egg 1 tsp apple cider vinegar 1 tsp espresso powder 2 teaspoons vanilla extract 1/4 Cup Raw Cacao powder 1/4 & 1 tblsp Coconut sugar 2 tblsp Extra Virgin Unrefined Coconut oil 1 tbsp hot water 1/8 tsp himalayan salt 1. Combine Almond flour, coconut flour, baking soda in a large bowl and whisk together. Preheat oven at this time to 350 F 2. Combine egg, apple cider vinegar, salt, coconut sugar, cacao powder, vanilla extract, coconut oil, hot water, and espresso powder in food processor and mix well. Combine dry almond flour/ coconut flour/ baking soda mixture slowly and blend together in food processor. 3. Scoop out batter should be very thick.. roll into ball. 4. Place cling wrap over dough ball and use a rolling pin to roll thin enough for the cookies. Cut out with cookie cutter or top of a small glass. 5. Place in the oven (350 F) for 10-15 minutes. Cream filling ingredients 4 tblsp Raw Coconut Butter 1-2 tblsp White Clover Canadian raw honey 1 tsp Vanilla extract if desired or other flavoring 1. warm coconut butter jar in a pot of hot water in a pot (set to low) coconut butter should start to become soft enough to scoop out at 5mins 2. In a bowl combine Coconut Butter, Vanilla extract and honey 3. Place mixture on one half of cookie, place another cookie on top and sandwich together.
