Trines Bulk Red Lentil Soup dollop coconut oil (or olive or just water if you want oil free)) 2 medium onions - finely chopped 2 cloves garlic - crushed 1tbsp garam masala 2tsp ground turmeric 1/2tsp cayenne pepper 2 cups red lentils (400g) 2x 415ml can tomato puree 2.5lt (10 cups) vegetable stock 1/3 cup fresh corriander (or paste equiv.) 1. Heat oil/water in a large pot (think big - youre going to add 10 cups of stock into it plus other stuff!) add garlic, onion and spices. Pop lid on and let them sweat it out for a little bit until theyre softish - dont check them TOO often or the liquids evaporate and theyll stick. If this happens dont freak out, the tomato later will lift it again!2. Add lentils and stir for 2 minutes. 3. Stir in tomato puree and stock and bring to the boil; simmer for 30 mins or until lentil are cooked. 4. Add coriander and youre done! Freezes beautifully, defrosts easily and is lovely with toast or a fresh bread.
