Truck in shop so a little bit trapped this morning. Time to experiment. Had some lean commercial pork. Hand cut it to about a 1/2 to 1/4 dice Added about 25 percent 1/8+ - diced Manga fat. Sea salt, #2, toasted whole black peppercorns, ground toasted fennel, ground to a powder some hot Italian chilis, hot paprika, white wine, dextrose and a bit of cornstarch to the mix. I find that a small amount of cornstarch can help and avoid the issues from having all that water in commercial pork. Fried a bit up in a pan and it was actually an amazing flavor. Stuffed it all into some 38 - 42 mm hog casings and in to dry they go. As always time will tell.
