Tuesday with the help of Chef and Flea Street Cafe co-owner, Carlos Canada, and Chef and Flea Street Cafe co-owner/founder, author, Jesse Cool, we conducted a blind taste test of a two-year old grass-finished steer and an 8-year old grass-finished cow. The goal and motivation for conducting the test is to be able to provide an affordable, healthy grass-fed beef option for schools, hospitals, senior centers, and to low-income communities. We also want an alternative market that provides a more humane option for culled and older animals than the auction yard/feed lots. The result was amazing - a tie!. The sample that was the 8-year old was truly delicious and received high marks in taste and flavor by half those taking part. It was agreed all around that the older animal had a stronger flavor, but that either made for a delicious steak. Next, we consider our options and potential distribution channels.
