Tuna salad cucumber snack! Instead of loading your tuna salad with mayo try this recipe instead! Just as delicious and great for the kiddies too! Ingredients: 1/2 Avocado 1 can of Tuna Red onion 1 whole cucumber 1oz almonds (crushed/ground) Lemon Salt, pepper and turmeric Directions: 1. Scoop out 1/2 an avocado and immediately add fresh lemon juice and salt to prevent it from browning. 2. Mash and mix in chopped red onions, turmeric and pepper to taste 3. Drain can of tuna and add to avocado mixture 4. Grind up almonds and add to the mix for a nice crunch! 5. Slice cucumber into 1/4in-1/2in slices and spoon tuna salad mixture on top! 6.
