Two courses in agri-business offered by Jefferson Community College (JCC) are slated to begin January 20, 2015 and class registration is open. North Country farms produce a variety of raw materials – cold-hardy grapes, dairy products such as specialty cheeses and yogurt, fruits and vegetables, meat products, and some farms also produce the end retail product. Many opportunities for growth exist with these raw material producers, as well as with the agricultural equipment suppliers and retailers who take the products to market. Grow-Prep-Eat: From Farm to Table and Northern New York (NNY) Agriculture are designed to further enhance the knowledge of those currently employed in or beginning a career the NNY New York agriculture and food service industries. Participants do not need to be enrolled in a degree program to register for either course, and both courses can be audited at one-third the tuition cost for those seeking only professional development and not college credit. Grow-Prep-Eat: From Farm to Table is a combination of lecture and lab designed to provide an integrated understanding of the food and agricultural industry and introduce the field-to-fork concept of integrated food systems. Students will have the opportunity to celebrate the foods and flavors of each season by utilizing fresh ingredients from local farms. Grow-Prep-Eat also covers a broad array of sustainability issues with on-site visits to local practicing farmers, dairy producers and processors with emphasis on those involved in sustainability issues dealing with water and waste systems, food marketing and local food movements. Renowned chef Christian Ives will teach the lab portion of the course in Jefferson’s instructional kitchen and dining facility. Northern New York Agriculture examines the diversity of agriculture in Northern New York and its economic impact in the region. Topics include agriculture technology, agronomy, environmental issues, animal care systems, public perception of the industry, production agriculture, food security and safety, value added agriculture, biofuels, agro-tourism and the economics of agriculture.
