Type-2 diabetes, from a fat perspective, is associated primarily with dysfunctional fat metabolism and secondarily with a high animal-fat and trans-fat intake. A moderate fat diet of 25– 45 percent raw plant-source fats does not seem associated or causally connected with Type-2 diabetes. Research has also shown that the omega-6 to omega-3 ratios are generally not in balance in Type-2, being too high in omega-6. This imbalance is made worse with the intake of approximately 13.3 grams per person per day of trans-fatty acids, as documented in the United States. Research has shown that diets relatively high in saturated fat and trans-fatty acids, such as we see with flesh foods and hydrogenated fats, can significantly affect insulin efficiency and glucose response. When we increase the percentage of omega-3 fatty acids in the diet, insulin resistance can be improved or prevented. It is highly suggestible that a disordered polyunsaturated fatty metabolism has some role in NIDDM.
