Uh oh...EJ wandered into the kitchen where he caught me red-handedly using one of my longtime cheats: sneaking veggies into the food. One of my handy tips for upping the nutrient density of the meals we eat is to use pureed vegetables wherever I think theyll blend in taste & presentation. 1. That can of pureed pumpkin in the back of the cupboard, leftover from the pie you never baked at Thanksgiving? Use a few tablespoons to thicken stews & gravies instead of flour. I swear by this. Up until now, the family never knew I did it. Pumpkin also stirs in well w/ ground beef mixtures, stretching out your portions & adding valuable Vitamin A, Iron too. Well back to the kitchen I go. #MeatlessMonday is gonna be good. =)
