Ultimate Chocolate Dipped Cookie 1 1/2 cup all purpose flour 1/2 cup cocoa powder 1 tsp baking powder 1 tsp salt (optional) 2 cups semi-sweet chocolate chip 3/4 cup unsalted butter 1 1/2 cup packed brown sugar 3 eggs 1 tsp vanilla extract 1 cup white chocolate chip ! recipe Chocolate Genache 1. Preheat the oven to 350 degrees F. 2. In a medium bowl, mix the flour, cocoa powder, baking powder and salt (if using). Once thats done, in a medium saucepan, combine the 2 cups of semi-sweet chocolate chips and 2 tbsp of butter. Heat and stir until melted and combined. Set aside to cool. 3. In a large bowl, beat remaining butter for about 30 seconds. Add brown sugar. Once combined, add eggs one at a time and make sure theyre combined before adding another one. Beat in chocolate mixture and vanilla extract to the butter mixture. After combining those ingredients, add the flour mixture. Stir in the white chocolate chips, 4. Drop the dough 2 inches apart onto ungreased cookie sheets. Bake them for 8 to 10 minutes or until the edges are firm. 5. Transfer to a wire rack to cool completely and then dip them into the Chocolate Genache. This recipe makes about 72 cookies. When I made it, I made 71 or exactly 72 cookies so it makes a lot of cookies! Chocolate Genache Recipe: In a medium bowl, place 1 cup of semi-sweet chocolate chips and set aside. In a medium saucepan, Mix 1/2 cup 35% cream (whipping cream), 1 tbsp butter and 1 tbsp granulated sugar. Bring to a boil just to dissolve the sugar and then take it off the heat (This wont take long at all so be careful not to boil for too long!). Pour over the semi-sweet chocolate chips that you had put aside and let stand for 5 minutes. After the 5 minutes is up, stir until smooth. Let cool a little and dip cookies and cover them as much as you want. (I went half way). Enjoy! :)
