Update on the prosciutti. Its in to 8 months and at 32% water loss. First two pics are of the mold thus far. I pulled it our and ran under luke-warm water with a clean (designated) meat scrub brush to get it all off. I hung back up to dry for a week or so. The third pic shows the cleaned/dried surface. Then I stuccod it again. Yes, I had prematurely stuccod it a while back and removed when it was clear I didnt have the loss I needed. So, looks like its back in for the duration.
