Urad dal puries Ingredients 1/2 cup urad dal soaked for 15 mins 2 green chilles chopped finely 1/2 bunch of coriander leaves chopped 1/2 inch piece ginger grated Salt and chilly pwd to taste A pinch of hing 2 spoons oil 3 cups wheat flour METHOD Grind the dal without adding water coarsely Mix the ground dal green chilles coriander leaves ginger salt chilly pwd hing and oil to the flour mix well Now knead the flour adding little water to make a dough it should not be very soft Smear the ball of dough with little oil cover with a wet cloth and keep aside for 15 mins Make small balls roll into puries and deep fry ALOO KI SABZI 1/2 kg potatoes boiled and cubed 4 tomatoes puréed 1 green chilly minced A small piece of ginger grated 1tsp salt 1/2 tsp turmeric pwd 1 and 1/2 tsp chilly pwd 1 tsp coriander pwd a pinch of hing Coriander for garnishing For the tempering 1/4 tsp rye 1/4 tsp jeera 1/4 tsp saunf few fenugreek seeds 2 cloves 1 small elaichi 1 piece cinnamon and 1 bay leaf METHOD Heat oil in a kadai add all the spices for tempering when it splutters add hing tomato purée green chilly ginger salt chilly pwd turmeric pwd and coriander pwd Fry till oil seperates add the boiled potatoes and 2 cups water boil well reduce flame and simmer for few mins switch of the gas garnish with coriander leaves and serve with hot urad dal puries
