Useless Fact of the Day- Allowing a wine to "breathe" refers to exposing wine to air before consumption. This allows the tannins to "soften" through oxidation- which brings out and mellows the flavors. Typically young red wines (esp. Cabernet Sauvingnon and Bordeaux) benefit the most from breathing- older vintages are usually best right from the bottle. Although a decanter is often used for breathing, the reason for decentering is to allow sediment to settle (i.e., you can let wine breathe in your glass).
