VEGAN ENCHILADAS!! Oh yeah!! Pinch me, Im dreaming!! I made the enchilada filling with ground up leftover Chikun roast mixed with a can of RoTel Tomatoes, and rolled it up in vegan Tomato Wraps. After baking in the Enchilada sauce I shredded some Monterey Jack (The Non Dairy Evolution) and broiled for several minutes until the cheese was nice and gooey.. Served with a side of the Quik Sour Cream. Dinner is served!! The Chikun roast, Monterey Jack and Quik Sour Crème are from recipes by Chef Skye Michael Conroy. thegentlechef
