Valentine Cake 1 (18.25 ounce) package white cake mix 1 (10 ounce) jar maraschino cherries 1/4 cup Macadamia Nuts Coconut frosting DIRECTIONS: Drain the cherries reserving juice; chop cherries and reserve. Prepare cake mix according to box directions, adding water to the reserved cherry juice to equal the amount of liquid needed for cake mix. Preheat oven to box directions. Fold the cherries and Macadamia nuts into the cake mix; stirring by hand. Pour mix into 2 round cake pans and bake in preheated oven. When cake has completely cooled, frost with Coconut frosting! Coconut Frosting 1/2 cup extra-virgin coconut oil (organic) 1 stick butter 1 cup granulated sugar 1 tsp vanilla extract 1 cup water 1/4 cup flour Beat together oil, butter, sugar and vanilla together, until very fluffy (about 5 minutes) Mix together water and flour in a small saucepan over medium high heat, stirring occasionally until the mixture reaches a thick, pudding like consistency. Let the flour mixture cool completely. Add flour mixture to the sugar/oil mixture, and beat for another 5 minutes, scraping the sides of the bowl, until it is very fluffy again.
