Vanilla Pudding Cookies -You can use chocolate or lemon pudding mix instead of the vanilla in the recipe. If you do the substitute omit the cinnamon and roll them in sugar only. 1/2 cup sugar 1 tsp ground cinnamon 1 cup Bisquick (or 1 pre-measured Bisquick packet) 1 pkg vanilla instant pudding mix 1 egg 1/4 cup salad oil, or 4 Tbsp (1/2 stick) soft or melted butter 1. Preheat the toaster oven to 350F. 2. In a small bowl, combine the sugar and cinnamon until thoroughly blended. Set aside. 3. Mix the Bisquick, pudding mix, egg and oil in a bowl until blended. The dough will be very dense. 4. Form the dough into small balls approximately 1″ in diameter and roll them in the bowl of cinnamon sugar. Then arrange the balls on an aluminum foil baking sheet, keeping them 2″ apart. Bake for 12 minutes, or until they just start to turn brown.
