Vanilla Slice-and-Bake Cookies - 1/3 cup margarine, softened - 2/3 cup sugar - ¼ cup frozen egg substitute, thawed - 1Tb light-colored corn syrup - 2 cups all-purpose flour - 1tsp baking soda - 1tsp ground ginger - 1tsp ground cinnamon - 1/4tsp ground cloves - 1 ½ tsp. grated orange rind Cream margarine; gradually add sugar, beating at medium speed of an electric mixer until light and fluffy. Add egg substitute and vanilla; beat well. Combine flour, soda, and salt. Gradually add flour mixture to creamed mixture; mix well. Stir in cereal. Divide dough into 2 equal portions; place each portion on a sheet of plastic wrap, and shape into an 8- x 1 ½ inch log. Wrap logs in plastic wrap, and freeze until firm. Unwrap logs, and cut into ¼-inch slices. Place 1 inch apart on cookie sheets coated with cooking spray. Bake at 350 degrees for 6 to 8 minutes or until lightly browned. Remove from cookie sheets, and let cool on wire racks. Yield: 64 cookies (32 calories each).
