Vegans and people ooked by graphic descriptions of vertebrate food, look away. . . . . . . I think Im going to weigh all the bits off this lovely turkey. Ive learned that spatchcocking a turkey is difficult -- I removed the spine but failed to flatten it. Still, a willingness to take bits off as they were done means that all the parts are juicy and tender. (In other news, I accidentally did giblets en papillote, as they were behind a flap that was secured with some plastic dingus.) Rib stock happening now. The backbone will be a separate thing, as will the neck, and the long bones. Pan drippings are awaiting transformation into More Gravy. (I made a lake at Mary Annes on Thanksgiving proper.) Everything else is wrapped up awaiting final disposition. Some of it is definitely turkey noodle casserole. Quite a lot of it is sandwiches. Some it *should* be shredded turkey with Mexican seasoning, but I dont quite have the heart to dry out the breast to do it. I think Im going to arrange a swap. What else do you like to do with leftover turkey?
