Veggi Burgers (Quinoa Base) with (leftover) Roasted Red Pepper Cheese. Veggie Burgers 1 cup cooked quinoa to the cooked and cooled Quinoa add ¼ C Nutritional Yeast 1 T worcestershire sauce 1 T Tomato Paste set aside Add all of the following in a dutch oven and toss in the olive oil. Roast in oven @375 degree for 25 min. 2/3 C chopped cilantro 1 can corn (drain) ½ can whole black olives (cut mine in ½) 1/2 red pepper 1/2 green pepper 1 can water chestnuts 1 cup baby carrots 1 stalk celery 1 T onion 2 – 3 cloves garlic Sea Salt and Pepper to taste ½ t Cumin 2 -3 T olive oil Almond Meal/Flour to pat them out in. The Cheese I had leftover from this Mac and Cheese Let roasted Veggies cool , then and in 1 Cup of Veggie to ½ Qunioa pulse on low in vita mix. Empty container and repeat until all the items are mixed as in picture. For the very best results this needs to be refrigerated for 3-4 hrs before frying. Make patties and coat each side with a dusting of almond meal or almond flour. I fried mine in olive oil, you could bake also, but I have not done that with this recipe. Makes at least 4-6 patties.
