Vegitable brothe / Vegitable Rasam : Cut all available vegitables, bunch of fresh coriander ; Dry heat coriander seeds, Mustard seeds, small piece of dry ginger, Cumin seeds, Black pepper and finely ground it. Now take a pan and give seasoning with cumin seeds, mustard seeds, red chillies and curry leaf, add all vegetables to the seasoning, add Turmeric, salt and Finely chopped fresh ginger, pour water and let it boil until vegetables turn perfectly soft / Do not over boil it. You can add tamarind past or freshly squeezed lime juice if you wish, Goes well with Rice, whole grains or simply as a soup.
