Vendor of the Day: Two Sisters Farm Ryan & Caroline Eddinger named their farm after their two daughters, Stella and Sophia. Their 20-acre farm is just west of Lawrence in Lecompton, Kan. Ryan grows lettuce 365 days a year in his hydroponic greenhouse. Instead of sprouting seeds in soil, this farmer plants the roots in white plastic channels that circulate oxygen- and nutrient-rich water through their roots. He doesn’t use herbicides and instead of pesticides, he uses ladybugs. The lack of dirt in the greenhouse makes for clean-looking lettuce that doesn’t require thorough washing and with the root still intact at the #OPFM, the lettuce stores longer than most. Some of the most popular varieties include butter lettuce, red and green oak lettuce, and arugula just to name a few.
