Vidalia Onion Pie - from the GA Dept of Agricultures cookbook: 1 unbaked 9 in pie crust 2 medium Vidalia onions, sliced 1 TBSP oil 2 eggs, lightly beaten 3/4 cup milk Salt and pepper to taste 1 cup grated cheddar cheese Preheat oven to 375. Sauté onions in oil until tender but not brown. Place onions in pie crust. Combine eggs, milk, salt, pepper in a small bowl. Mix well. Pour mixture over onions in pie crust. Sprinkle with grated cheese. Bake 40-45 minutes. Let cool 5-10 minutes before serving. Enjoy!!
