Viet-style lettuce wraps, with TJs pork belly. PB was marinated (yes, its pre-cooked and i still marinated it!) in 5-spice and fish sauce, seared on all sides, then glazed with caramel (just melted sugar in water until it turned caramelly), and stuck under the broiler. butter lettuce for wraps, with quick-pickled carrots, jalapenos, scallions, shiso, mint and basil. nuoc cham on the side for dipping, jasmine rice. turns out butter lettuce is perfect for wraps!
