Vodka Fruitcake Ingredients: 1 cup unsalted butter, softened 4 eggs 1/2 cup Vodka 1 tsp vanilla extract 2 cups all-purpose flour 1 cup sugar 2 cups dried fruits 3-1/2 tsp baking powder 1/4 tsp salt Preparation method: 1. Preheat oven to 350 degrees. 2. In a large bowl, combine butter and eggs. Stir in vodka and vanilla extract. Add dried fruits 3. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Gradually add the flour mixture to the butter mixture, mixing until just combined. 4. Fill the cake mould. 5. Bake for 18-20 minutes, or until a toothpick inserted in center comes out clean. Transfer to a wire rack to cool completely. Option: Brush the tops of the cupcakes with more vodka!
