WHATS COOKING? ‘Nursing students should try to be positive role models for their patients’ says award-winning UWS nursing graduate and former chef Gordon Russell, who has made a cookery DVD to promote healthy eating on a budget. Heres his recipe, as featured in the September issue of Dumfries & Galloway Life, for Chicken Nachos with salsa and guacamole (our photographer Danny Fowler, was so inspired following his photoshoot with Gordon, hes been making these nachos at home and says they are delicious!) Gordon Russells Chicken Nachos with salsa and guacamole (serves one for supper or a lunch for two) Ingredients: Chicken Nachos 1 Chicken breast 2 Wholemeal tortillas 1 Buffalo mozzarella Salt and pepper Smoked paprika Chilli powder Guacamole 1 ripe avocado 2 large spoons of Greek yoghurt Juice of ½ lemon ½ red chilli ½ onion Salsa 2 tomatoes ½ onion ½ red chilli ½ tub tomato passata 2 tablespoons olive oil 2 cloves garlic (chopped) 1 handful chopped coriander METHOD 1. Cook the chicken breast first as it will take the longest time to prepare. By the time it’s cooked everything else will be ready. Sprinkle the raw chicken breast with smoked paprika and chilli powder (use what you like depending on how spicy you like food) and a sprinkle of salt and pepper. Grill, BBQ or bake the chicken breast, using only a drizzle of olive oil, until it is cooked through and slice. 2. Place the two tortillas one on top of the other and cut in half, then in quarters then into eighths. It will resemble nacho crisps. Spread them out on a tray and bake at about 180-200C. Keep an eye on them as they cook quickly. Once slightly toasted and crispy, remove from the oven. 3. For the salsa, chop up the tomatoes, onion, red chilli, cloves of garlic, coriander and mix in a bowl with the tomato passatta and olive oil (remember to season with salt and pepper). 4. The guacamole is easy! Blend or finely chop the avocado, onion and red chilli and mix with the yoghurt and lemon juice. 5 Finally assemble: the crisps first, then chicken strips and salsa, tear up the mozzarella and place on top, and finish with a spoonful of guacamole and yoghurt.
