WHATS FOR DINNER? YUMMY Healthy Made Over Mac N Cheese Your kids will never know its healthy. Serves 4 2 cups whole wheat pasta (macaroni) 1 1/2 cup Butternut squash, peeled & cubed 1/2 cup chicken broth 1 cup milk 1 clove garlic 1/8 cup Greek yogurt 1/2 cup Swiss cheese, grated 1/2 cup Romano Cheese, grated or shredded 1/8 cup parm cheese, Shredded Preheat oven to 350 degrees Cook pasta according to package directions. Leave out salt. Mix squash, broth, milk & garlic together in a saucepanon medium heat. Simmer until squash is tender about 10-12mins. Remove from heat & puree. Stir in yogurt, cheese and dash of pepper and blend once more. Pour sauce over cooked macaroni and stir to coat. Put mixture in a greased 8x8 or 9x9 pan ( if double recipe use 9x13 pan). Sprinle some parm or shredded cheese over top and bake in oven 10-15 mins untiil heated through. You can use any combo of cheeses you like – White cheddar, Herb & garlic, Mozzzarella, Gouda or use just one of your favorite cheese instead combo. Source: Sobeys Dietician ~Judy Coupon
