WHITE ZOMBIE CHILI •1 T Oil •1 lb Chicken Breasts •1 Pkg Salty Simon’s Zombie Salt •2 C White Onion - chopped •2 cloves Garlic - minced •2 15-1/2 oz cans White Beans - undrained •2 4 oz cans Green Chiles - undrained •14-1/2 oz Unsalted Chicken Broth* •Fresh Cilantro •Optional; Shredded Cheese or Sour Cream •Rub Chicken Breasts with 2 t Salty Simon’s Zombie Salt •Heat Oil in a 4 qt stock-pot and saute Chicken until browned, remove and cool •Add Onions to pot, saute until tender •Saute Garlic until fragrant •Stir in Beans, Green Chiles, Chicken Broth and 2 t of Salty Simon’s Zombie Salt •Bring to a boil then reduce heat to a simmer •Dice Chicken and add to pot •Simmer for 10 minutes •Add Fresh Cilantro •Adjust seasoning to taste with more Salty Simon’s Zombie Salt if necessary* •Garnish with Fresh Cilantro, onion, shredded cheese or sour cream if desired *This gets really salty, really fast. If using salted or low salt broth, reduce the amount of Zombie Salt accordingly, and taste before adding more to ensure it doesn’t become overpowering.
