Warm up those fingers and toes this evening with Megs Soup Of The Week (week 4) - Spicy Sweet Potato, Red Pepper and Chickpea Soup 🍴 Ingredients - 1 red onion 1-2 gloves of garlic 1 green chilli 1 teaspoon of fresh ginger 1 sweet potato 1/2 butternut squash 750ml water + vegetable stock 1 red pepper 240g chickpeas (drained) 1 tablespoon of Lucy Bee Coconut Oil Seasoning Chilli flakes to top (optional) Method Sauté your onions and garlic in Lucy Bee for 10 mins or until golden. Add the green chilli and ginger, stir for 5 mins. Add the stock, sweet potato and butternut squash, simmer for 15 mins. Add the red pepper and chickpeas and continue to simmer for 5 mins. Blend. Season. Serve! Enjoy 💋
