Was flicking through my recipes and came up with a great recipe. My grandma used to make it with left over stuffing or potaoes for breakfast and we could never guess what it was made of..... really crunchy and crispy. This recipe is for Bread Pakora Rolls. Ingredients For Filling Boiled Potatoes—5 medium (boiled) Cumin pd-2tsp Spring onions- 1 chopped (optional) Salt –to taste(3/4 tsp) Garam Masala – ½ tsp Ginger – 1 tsp (grated) Fresh Coriander Chillies (Optional) Bread- 10 slices stale (preferably white, take off the crusts) Oil for frying Method 1) Boil and peel the potatoes, mash them in a bowl and add coriander, ginger and all the spices including salt. 2) Cut the crusts of the bread slices. In a bowl take some water enough to soak the bread slices .Take a slice in your palm and dip it in water (very quickly take it out) squeeze it with other hand trying to keep the shape. 3) Once all the water has been squeezed put about 1 ½ tbsp of prepared potato mixture on the bread and try to bind it giving it an oval shape. 4) Please ensure that the bread is covering the potato mixture from all sides otherwise when frying the mixture will splatter. 5) Leave the uncooked rolls for ½ hr in the fridge. Heat oil in a pan and fry them until golden .To check if the oil is heated put a small piece of plain bread in the oil if it starts frying it means that the oil is hot enough to fry the bread rolls. 6) Serve with coriander and mint chutney. Serving Tip—these freeze well or can be cooked in advance and heated in the oven. Hope you like them...... Kids love it , it hides the veges very well.(grated carrots, spinach.....)
